Fiesta Friday badges aka buttons are finally here. It took me long enough to come up with them. Not from lack of hard-work or trying, I assure you. Between the hand-painting and trying to figure out how to put the HTML codes in the fancy boxes that scroll up and down and sideways, I was close to calling it quits. But I persevered. For you, just for you.
You can grab these badges/buttons and display them on your site, if you like. I did try to make them pretty and fun so you’ll be proud to have them. You have the option of using them in an image or a text widget. However, I find that the easiest way to import them to your site is to simply right-click on the images, copy the URL addresses and then paste them where applicable.

Besides the badges/buttons, I’m also bringing Chicken and Sausage Jambalaya to FF6. Again, just for you. As you know, I’m observing Lent and today is no-meat Friday, so there’s to be no chicken or sausages in my food. Maybe I’ll have egg salad or fish sticks, instead. Not too bad, eh?
My Fridays have just gotten a lot more predictable since Lent started. That doesn’t mean that they can’t be fun. Just look at Fae’s Singaporean Chili Crab. I don’t think I’d be missing meat if I had that. Maybe I will have it instead of the eggs or fish. Just need to find crabs. But first, here’s the jambalaya.
Chicken and Sausage Jambalaya
1 cup chopped onions
1 cup chopped green bell peppers
1/2 cup chopped celery
1 cup peeled and chopped tomatoes
1/2 cup chopped carrots (optional – I added them just for color)
1//2 lb chicken breast, julienned
1/2 lb smoked sausage, cut into rounds 1/4-inch thick
3 cups chicken stock
1 1/2 cups long-grain rice
1 tsp paprika
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp dry mustard
1/2 tsp dried thyme
1/4 tsp cumin
1/4 tsp cayenne (optional)
Salt to taste
2 bay leaves
2 tbsp oil
1. In a heavy skillet or Dutch oven, heat oil over medium-high heat and add onions, bell peppers, and celery. Cook until vegetables are completely cooked and browned, scrapping the bottom of the pot often, about 10 minutes.
2. Add all seasonings and cook for a few minutes longer, continue to stir and scrap the brown bits on the bottom of the pot.
3. Add the tomatoes and chicken and cook for 5 minutes, until chicken is no longer pink.
4. Add chicken stock and bring to a boil.
5. Stir in the rice and return to a boil.
6. Reduce heat to a simmer, add sausages, and cover the pot. Cook for 20 minutes or until liquid is completely absorbed and rice is fully cooked.

If Sadia@Savory and Sweet Food were to enter her Chocolate Molten Lava Cake in a dessert contest, she would win, hands down! Have you ever seen anything so enticing? And her method in getting that oozy, gooey chocolate lava in the center of the cake is so clever! This one will be bookmarked by many.
The other chocolate entry that caught my eye was the Nutella Espresso Sticky Buns from Selma@Selma’s Table. Nutella and espresso mingling together? Well, hello, I’m in! Wouldn’t you?
Laura’s Lemon & Cardamom Panna Cotta Parfaits, in the mean time, don’t even have any chocolate in them, but look at how refreshing and cheerful they look. Spring in a cup is what she brought us. Thank you, Laura!
And then there’s Mila@milkandbun who came with her Pancake Pie, a savory layered pancake “pie” with cream cheese and smoked salmon. Even I thought it looks beautiful and delicious, and I don’t even like salmon. That’s saying something, isn’t it?
Finally, I have to give a mention to all the avocado recipes from last week’s party. I had never before seen as many avocado dishes as I did, and they’re all so very creative. Give yourself a pat on the back. Bravo! These recipes will stay in my archive:
