FIESTA FRIDAY #33

I hope my co-hosts, Andrea @Cooking with a Wallflower and Sylvia @Superfoodista, like this recipe. I know these two are into healthy food. The kale crust and all the colorful veggie toppings should satisfy the health quota of the day, yes?

Now, with the help of my FF32 co-host, Hilda @Along The Grapevine, I’m presenting FF32 features:


Fig and Grape Pie from Sue @Birgerbird. In Hilda’s words, “Sue escorted us through her local market on a fascinating grape tasting tour where I suddenly found myself craving grapes I didn’t even know existed. She then took us step by step through the creation of an elegant and seasonal Fig and Grape Pie. The roasted fruit on a flaky pastry is a perfect dish to celebrate the end of the summer season. I shall take those beautiful images with me to market and hope to find suitable ingredients and try to replicate this.”

You know what’s better than a fig pie? A fig and grape pie, of course! Just like I can never resist figs, I can’t seem to stay away from grapes, either. Two favorite fruits in a single pie! I love ya, Sue! In an enraged kind of way, ‘coz now you’ve made me crave this pie, and I know there’s no bakery in the world who makes and sells it. So, I will have to make it myself. Thanks a lot, Sue! 🙂


Dark Chocolate Oat and Seed Snacks from Nourished Roots. My mom is a guest at our house and I asked her to pick a feature and this is her pick. Why am I not surprised? Let’s just say she’s a health addict. The quinoa, hemp and chia listed in the ingredients are enough to seal the selection for her. I happen to stock my pantry with these super foods regularly, so you know what Mom and I will be making, right? Thank you so much, Nourished Roots, for sharing a wonderful, healthy recipe with us at the fiesta!


Crispy Tofu and Pineapple Salsa in Hibiscus and Rosehip Tea from Petra @Food Eat Love. In Hilda’s words, “Petra amazed me with her contribution of a light dish, as pretty to look at as it is great to eat. [It] has more flavours and textures than most meals where I come from. Also beautifully presented were her Beetroot Salad with Whipped Feta Dressing and a Roasted Squash Salad – a truly winning selection of tantalizing treats!”

I don’t know what to say, Petra! I’ve said it before that I think you can run a gourmet restaurant if you wanted to. I don’t know anybody who can come up with such flavor combinations unless they’re professionally trained. You know, like Iron Chefs. What a recipe!


Extra Delicious Fried Modaks from Swayam @Là Petit Chef. I love it when I learn something new. I had never heard of Modaks before, Swayam! I actually thought they were some kind of wontons when I first saw your post. Let’s just say I wasn’t disappointed when I found out I was wrong. Why, these modaks look and sound tantalizing with their filling of jaggery and coconut. Plus, they look so adorable! I wouldn’t mind tucking into a few of these. Do they travel well? I’m not at all suggesting that you ship some to me, Swayam. Just asking. Really. Promise. Swear. 🙂

This unpurposeful blog keeps chugging along, if nothing else, for Fiesta Friday. That, ladies and gentlemen, will stay for at least another year. I’ve already paid for the link tool for the entire year! I want all of us to take full advantage of it. You are having fun, aren’t you?

If you have any suggestions on how to make this event even more fun and meaningful, by all means let me know. Fiesta Friday belongs to all of us, you hear? We can make it what we want it to be.

For instance, Catherine@Catherine Cuisine came up with the idea of a monthly Fiesta Friday Challenge. Remember when we talked about Fiesta Friday Part Deux aka Fiesta Friday 2nd Degree? Well, it’s finally time to reveal our First Fiesta Friday Challenge. The challenge for the month of May is to make something that uses yeast and herbs, both, together, in a single recipe. Remember, this is just a friendly challenge just to get us more comfortable working with yeast.

I will create a separate post and link-up for this challenge, put up a badge on the sidebar, and talk about it in detail, if it’s well-received. Right now, I just want to see a show of hands of how many are interested in entering the challenge.

Several of you have also suggested ideas for “Special Edition” Fiesta Friday, sort of like a “kick-it-up-a-notch” Fiesta Friday if you will, such as cooking up Featured Recipes, cooking a buddy’s recipe, or themed Fiesta Friday, etc. Thank you for all these great suggestions. I will try to incorporate them in future Fiesta Fridays. How ’bout we start with a Luau Fiesta Friday? How does that sound to you? I’d go to Hawaii with you anytime. Lemme know.

Pizza Pie

When the moon hits your eye like a big pizza pie, it’s amore …..

That thing right there came out of the oven and The Saboteur started to bring out his inner Dean Martin. Now you know pizza makes that man croon. No wonder I don’t make it that often. Just kidding, hon! Oh, what the heck, chances are he won’t read this. So, between you and me, I thought he was channeling Jerry Lewis.

Then he called out for the kids to quickly get their hineys to the dining table. And they, too, said ooh … I knew why they were excited. Pizza meant no utensils. Is there a more perfect food?

I should have made this more often. It’s a fool-proof guarantee that your greens will be eaten. Smothered in cheese, mixed with a bit of meat, on a piece of bread, why even kale, arugula, and senposai passed the taste test of vegetables hating boys!

Of course The Boy had to mention that next time there should be less kale, but he ate his piece clean off his plate. Think I’m going to make it less green next time? Not a chance. Not when you have kale and senposai. Did I mention how remarkable these plants are? Still making leaves, nary a flower in sight.

The best part about this was the good amount of basil used. Whew! Now I can relax and let my basil grow a little more. It felt like a marathon for a while, trying to finish up all the basil.

This pizza pie would likely be really good with spinach, too, but who has spinach in the summer? One has to work with what one has growing in one’s garden. 

Speaking of which, one is about to lose one’s garden over here. The neighbor’s bamboo is all over it. I just want to cry. It may not look it, but I work very hard in there.

Recipe seems unnecessary. It was just store-bought pizza dough (there’s no shame in it whatsoever, especially when they were only $1 a piece), stuffed with cheese, meat of choice (or no meat if you’re vegetarian), chopped tomatoes or peppers, and blanched & chopped greens. In my case they included arugula, basil, kale, Moringa, and senposai. You can certainly use other vegetables.

The only thing to remember is to make sure you roll your dough on a surface lined with parchment paper. The paper will allow you to transfer the pizza onto the baking sheet or stone without ruining the design.

Also, once you flip out the slits, you can spread them apart and fill them with more stuffing, as needed. More stuffing, edges get eaten. At least in our house.
